Macerated Heirloom Tomatoes – A celebration of summer preserved, featuring St Tola’s artisan goats cheese, fresh basil cress, and delicate olive croutons

To cleanse your palette, choose between

Sweet Corn and Chicken Soup – Comfort elevated with a crispy wonton garnish or Champagne and Pomegranate Granita – A sparkling interlude to refresh and delight.

Mains

Choose between two show-stopping centerpieces:

Surf and Turf – Premium Irish Hereford beef fillet paired with grilled gambas, nestled alongside sautéed leeks and duck fat roasties, finished with a rich red wine jus and bright lemon hollandaise

Salt Baked Bass Cracked Tableside – Theatre meets taste as this whole bass is presented and carved at your table, revealing tender flesh accompanied by confit tomato, roast red peppers, vermouth and herb butter sauce, and thyme-scented roasted potatoes

Dessert

End on a sweet note with your choice of:

Petit Four – Chocolate-dipped strawberries with cloud-like Chantilly cream

Silky Milk Chocolate Mousse – An indulgent composition of raspberry crémeux, refreshing raspberry sorbet, delicate meringue, blackberry jelly, and fresh berries
